I think it's a thing called a Jewish harp.
And you're absolutely fuckin' right; that soundtrack is brilliant. I heard some Belgian musicians perfomr some songs from it and two days later, I ordered the cd. Took a long time to ship it over but it was worth it.

Death Design (movie was never released but the soundtrack found its way to the audience, think slightly expermental black/death. For the metalheads, Blakkheim and Dan Swäno were the engines behind this soundtrack).
