Khar is basically right. First of all, none but the most insane Christians have actually called people pagan or heathen for at least 150 years. And paganism denotes certain non monotheistic religions, especially those centered around, like Khar said, nature worship AND worhippers of old pantheons. As such your Mexican polytheists would be "pagans" in this sense of the word.

Well, the old pantheons do just tend to be very developed nature-worship, in that each god is a manifestation of a different aspect of nature, and their mythology a way of explaining natural mechanics. They simply reached a more complex level because they were mainstream. Modern neo-paganism drastically simplifies the whole business, with a lot of wiccans, for example, simply rolling the whole thing down to one male and one female god each with three aspects (the God and the Goddess). The goddess chant (Isis, Astarte, Diana, Hecate, Demeter, Kali, Inana) gives you some idea of the sort of accretion involved in that.
