Eh, I think Starcraft has a couple references but sadly I can't remember.

Warcraft certainly does. the Undead wraith for example: "I ain't got no-body."

Ahhh... there was something in Everquest 2... but I can't remember off the top of my head...

Everquest 2 did have a reference to 8-bit Theater one time. There's a quest where you have to deliver swordchucks to some barbarian.
