I was thinking Low because of similar tempos and some similar mood, with a generally laid back and slower approach to rock.  Its not a great comparison, but I saw some similarities.

And you're right to say that many times Sigur Ros is very un-minimalistic, but I think their are other times (especially on ( )) where they get very minimalistic.  I think Untitled #5 (Alafoss) is an okay example, and Von also has some good examples.  Not minimalism in the traditional sense (i.e. classical minimalist, like Phillip Glass or Steve Reich), but evoking a feeling of minimalism.
