I was quite obsessed with Final Fantasy's cover of "Peach Plum Pear" by Joanna Newsom for a while. I also really love TV on the Radio's cover of "Mr. Grieves" by the Pixies.

Lukeypoo:
I don't how familiar any of you are with Final Fantasy (the solo project/band not the game) but he does a cover of Bloc Party's - This Modern Love that is out of this world.

His name's Owen Pallett, he played with Arcade Fire for funeral and has dipped his toes in quite a few excellent Canadian bands. Enjoy!

*EDIT*
As soon as I post this, someone just ahead of me posts a Final Fantasy cover that he likes, coincidence!?!? Yup.

Hat:
I really adore Between The Buried and Me's cover of Bicycle Race. It's not particularly adventurous or out there, but it is a fun screw around with a fun tune, so it is pretty inevitable fun will result.

nuisance:
The Sinatra cover on the Junior Boys' latest, 'So This Is Goodbye' is pretty stunning.  Seems to be completely sincere, which is just as well.

Someone mentioning Stereolab in the post-rock thread reminded me that (Ui + Stereolab = ) Uilab's 'St Elmo's Fire' has a high wickedness factor...

GamerMunkie:
I'm partial to The Scissor Sister's cover of "Take Me Out" by Franz Ferdinand
And also No Doubt's cover of "Come On Eileen"
