Photoshop
Firefox
Adium
iTunes

Those are my most used and most loved programs.

LaTeX is the best typesetting program ever.  I’m writing my thesis in it, and I’m never going back to another word-processor for serious documents.  Suck it, MS Word.

Right now, I’m going through the arduous task of learning to code in Fortran 90/95 so I can use my uni’s cluster for enginnering calculations.

I haven't seen anyone touting teh merits of Camino.  Firefox is for windows/linux...mac users ought to try Camino: FF aquafied.

Mnementh:
Quicksilver, Adium, Firefox, Apple's Pro Suite (Final Cut Pro, Motion, Soundtrack), X-Chat, and TextMate on the Mac, and Gaim on the linux box.
