Can we just give Photshop a special lifetime achievement award so that people don't mention it in every post?
Along those lines, how about we stick to apps that other people wouldn't know about that we think are cool/useful? Along those lines, I gotta point out both Blitz3D and Poser. The former is an excellent programming language/game engine I use for developing interactive 3D stuffs. As for the latter, although as a 3D tool it is faaaaaar from full featured, Poser is hella fun to goof around with. It doesn't take much effort to just throw up a couple characters and start rendering out images of them in funny positions.

Quicksilver changed the way I think about doing typical daily tasks on a computer, and typically the first thing I do on a computer that doesn't have it installed is make a fool out of myself by trying to invoke it.
Vim changed the way I think about editing text, which is a bigger deal than it might seem like. Like Quicksilver, actually, there are so many different features and things packed into Vim that using it is a perpetual learning process, which I love; you can just keep getting better with it. With most editors, the only way to get more productive is to increase your touch-typing speed, but with Vim, there's always one more command that can save you a few keystrokes.
LaTeX has to be on here now that I'm back in grad school. There is simply no better way to write anything with math in it. And LaTeX also gets bonus points for being so widespread that a Google search for it doesn't bring up weird fetish porn.
