I was so sad for the longest time when I came here and there were no pictures of the baked goods. I am very happy I came in this thread. That blueberry pie looks delicious.

And I made these ages ago (can't remember if I posted the recipe here or not), but here's a pic of some Black Bottom Cupcakes I made:



Basically, it's a vanilla cupcake (some recipes make them chocolate) with an Oreo on the bottom and cream cheese filling. I also added a dollop of Irish cream icing on top. (The way the choc chips are is a happy mistake, as they were supposed to be mixed in with the cream cheese filling, but it all worked out.) Though they are verrrry rich, they were amazing. And I think this was the first time when I made everything (cupcakes, filling, and icing) from scratch. Usually it's only one thing, as I never really have time to all out bake.

Okay, so this thread and Lunchbox's blog not only inspired me to register today, but I also made the gingerbread cupcakes with ginger-lemon icing from said blog. They are absolutely scrumptious. The cupcakes have a little bite to the aftertaste, like a gingersnap. The lemon icing is a perfect counterpoint, thought I did add a few tablespoons of cream cheese to my icing because I wanted it thicker and less sweet. Deeeelicious. My husband fully approves. I would provide pics but I'm a terrible icer and all I've got is a camera phone.

This thread is the best, it quite honestly is what inspired me to start trying to cook.

I say trying. Once I blew up a dish of scrambled eggs (there was egg on the ceiling). Once I set fire to my oven gloves while I was wearing them. Once I chargrilled a microwave pastry. Once I melted a pancake. Believe me when I say my cooking is not the best.

But I did make some pretty nice coffee muffins using an adapted recipe that I think I borrowed from your blog, Lunchy. I had to change the coffee liquor to just plain coffee because we're teetotal over here, but they still turned out pretty nice. I think next time I'll put chocolate chips in though, they didn't have much texture.

If I had a camera I'd put pictures on here more often, but I don't. Also I'm not totally sure how to post an image, they never work for me. Help?
