Eric Idle voiced Rincewind in the decent PC adventure games.

Maybe Bob Hoskins as Twoflower?  Twoflower should be Asian, but I can't think of an Asian actor who would do.

Death has to be a combiation of the voices of Cristopher Lee and Ian MaKellen.
