You forget that if he's in fact guilty, he's a mafioso. Mafia members are notoriously proud of their criminal careers, and will not weasel out of a sentence with diplomacy. At least not nearly as efficiently as he is doing.
I doubt he's an innocent bystander, but he also doesn't seem like a criminal to me.

Yes, but one doesn't brag about their criminal records if they are going to be killed because of it. Most people would rather be alive than look tough because they have an awesome career in killing people.

But if he was really a sissy, he'd attempt to strike a deal or something. There really isn't much hope in attempting to look completely innocent when a mob is fixated on lynching you.
