Isn't amaretto almond-flavored? The process may be very different for this though, I'm not really down with my distilling techniques.

I've made all sorts of infused vodka creations... Nuts worked OK - cashews worked the best. My favorite was apples and cinnamon sticks. Just slice some apples, get some cinnamon sticks, and throw them into some vodka. Let sit for a month or more, and you've got bottled awesomeness.
