I think your definitions of post-rock are too narrow.

I dunno, I've always thought that post rock was perhaps too broad of a genre name. For the classic example, we are lumping Tortoise and Mogwai into the same genre. And the genre really hasn't hit a point like metal were there are 43543198 different sub-genres and the term metal is used as an all-encompassing name for the sub-genre's as a whole. 

Or maybe it has hit that point. I once got a monthly e-mail from eMusic referring to Explosions in the Sky/Mono type bands as crescendo-core. It was highly disturbing.

Jackie Blue:
Post-rock is a very broad genre.  This is not a bad thing, because it saves having too many subgenres.

Tortoise and Mogwai are far more similar than, say, Slint and Flying Saucer Attack.
