Yeah, tofu's great if you simply work with it rather than try to perform miracles. I like using it since it's versatile and easily picks up other flavors but it's silly to act like it's a foolproof substitute..

The texture of tofu really bugs me.  I tried some miso soup one time that had tofu in it and shivered every time I downed a chunk.  It's like swallowing rubber.

That is because wet/raw tofu is horrible- cooked in a dish or stir-fried, and it's really an entirely different substance and nice to eat:)

And there are different ways of preparing it that have an effect on the final texture. There is soft and there is hard tofu. I prefer the softer kind myself.


Tofu and seaweed may be acquired tastes for western society but they can both be pretty damn good.
