I was once served rice pilaf in half an avocado.  It was excellent.

I am going to agree with everyone who has praised guacamole, and especially the people who recognize how incredible it is on (in my case veggie) burgers.

Guacamole is the thing I make. Whenever we have fajitas or chili or stuff like that I make the guacamole. I love the stuff.
