Bloodlines was a fun, if buggy, FPS/RPG hybrid. I never did get a chance to play Redemption.
I tried playing Temple of Elemental Evil, but I wasn't able to get into it... it was much more strict about PnP rules than the Infinity Engine and Aurora Engine games were. I remember making my party and getting aggravated by the fact that most of the Feats didn't actually tell you what they did, and the manual didn't, either! :x
Boro_Bandito:
I just reinstalled my copy of Bloodlines actually, and I'm running through it with a Ventrue atm. With the official patches and then later the unofficial patches it takes away pretty much all of the game-breaking/crash/death bugs, though there all of those graphical glitches are pretty much there. Still, fun.

Amen. Also. FREESPACE. Good stuff right thur. Oh.... and Wing Commander. The original. Also, as was stated earlier. The Thief series is supposed to be good.
I personally would like to point torwards a few of my favorites.
Sid Meier's Pirates
Sid Meier's Civilization 1-3 are all very good old school games. (I know at least 3 is for PC) and Civ 4 is pure gaming bliss. (Yup, I still play it every single day.
Not as oldschool, but still fun. Freelancer. Oh, and Fallout 1 is awesome.... and Diablo 2. Bloodlines is another good one, a tad bit buggy though.
Really, this thread has ALOT of good titles, I would look for game demos and reviews online if I were you. Good luck in your search!
Chesire Cat:
Descent 1-3 played with a Joystick with a hat-switch and possibly a throttle.
