Think of the word "take" as being like its use in the phrase "double-take", which is when someone is surprised and takes a second look at something.

It is not a very common phrase and is for informal use.

Surgoshan:
It comes from film, wherein a "take" is a scene, reaction, or such that has been filmed.  So when the camera zooms in on the hero as he agonizes over which wire to cut... that's a 'take'.  It's been took.

So a spit take is a brief cut of someone spraying a significant quantity of fluid.  Because it's an action shot and can will involve dramatic cuts before and after, it can be done all by itself (rather than as part of a longer camera sequence).  So you can film the take all by itself.  A spit take.
