When I first discovered them and I was already interested because of the Moby Dick lyrics, butwhen I saw the artwork I was speechless... and the music is even more jaw-dropping.
Here's some of my all time favorites:
Esoteric - The Maniacal Vale [A really good album... The music is as Psychedelic, crushing and "warm" as the picture]
Pig Destroyer - Phantom Limb [I never thought a Grindcore album could look like this]

I don't know why, but I like Lightning Bolt's album art, especially this one.
I'm a sucker for typography. Downloaded this in the mediafire thread just for the art...glad I did, good album. Kudos to whoever uploaded it.

Pretty much all of the stuff JD Baizly(sp?) does is kickass. covers for Baroness, Kylesa, Cursed all rule hard.

i am a fan of the time to pretend album art, but i can't say it led to me listening to mgmt. but i saw it and i thought "wow this is very appropriate."
and although most posters seem to be indie music fans predominately, i have to sing my praises for most of cradle of filth's album art. it kind of all ties together all the albums, and it is always appropriate for their music. cruelty and the beast may be my favorite.
