Angry Birds deserves mentions from everyone ever, and Doodle Jump should be brought up again, especially since the multiplayer update hit last month.
Also, the Plants vs. Zombies port works really well on this platform.

i'm not an iphone person but this game rules so much! miss being able to play it (via borrowing the iphone of a person who has it)
