Along the lines of really modifiable guitars, what about the first wave of tiny tube amps and heads, eg Epiphone Valve Jr and Fender Champ 600? There seem to be more mod kits for those amps out there than you can count.

Personally, right now I'd rather the Marshall Class 5 or a Vox AC4TV though.

Kwaping:
Fender Blues Junior? Small all-tube amp with a huge modding community behind it. I personally don't see it as a future classic but it fits your description.
