oh hey, I just had this stuff for the first time, and it was amazing.

Paella could certainly be filled with langoustines and oysters!
I was watching a Food Network show where someone was just trying all kinds of different paellas from across Spain, and one guy was cooking in a big paellera over a fire and when he had combined everything he took a big twig of rosemary, lit it on fire with the flame, then tossed it on top of the paella and closed the lid so it would just slowly smoke into everything.
That is what I want to do with paella some day.
