Let's not forget ratafia, as far as pirates of the Atlantic Ocean and the Carribean sea are concerned. But I guess you could argue it's included under the "brandy" category you mentioned.

Actually, the spelling depends on the language. Irish English and American English tends to use whiskey, while the likes of Canada, Scotland, Japan and Wales use whisky. That said, there are always exceptions where a brand will use a particular spelling. The real difference comes down to how the spirit is distilled and the methods used. And why, yes, I did work at a distillery for a time.

Generally here in Canada it depends on where the nectar of the gods was distilled that will effect how we spell it.
I spell it in one of the following ways: Highland Park or Bushmills.
