Apostrophe for plural? Tsk. (Although wouldn't an 8-string bass just be a four string bass with each string doubled?)

Yes it would, just like the 12-string guitar. Also I put the apostrophe there because 'basss' felt even weirder to me. Yes, I dont't know how to correctly pluralize bass.

Method of Madness:
Well, yeah, it's basses.

Fair enough. Be that as it may, I kinda like the idea of an 8-String bass.
