Does the mixer have a USB out?

Well, if you use something like an M-audio fast track you can listen to the monitor output without the input lag, but you'd have to do any effects post-recording or put up with the 100ms lag or so. The cheapest way would probably be to get a second hand pod/roland cube, line 6 spider with modelling, I think. It's not ideal, but yeah.
As for finding out what guitars suit you: Just go into a guitar shop and ask to test various models until you find something you really like.

The mixer has a USB out. I had considered using the Insert of the guitar channel for effects.
Maybe it's possible to reduce the latency through ASIO (Windows) or JACK and a realtime kernel (Linux).

ASIO4all and an 'acquired' copy of Native Instruments Guitar Rig 5 or Schuffam Amps S-Gear.

Oh, sweet. That's perfect then. I've considered getting one of the phonic mixers with a USB out myself recently, mostly for drums and live recording purposes. I hadn't even thought about just using it to replace my recording interface (because I am stupid, it would've occurred to me as soon as I had it, I suppose).
