Yeah, from what I remember being told, its incredibly time consuming to make, so much so now that its pretty much mass produced now. Its a granular texture that throws non-Finnish people off, and it kinda tastes like dark bread mixed with treacle. It can be quite difficult to eat for the first time, especially if you don't know what its like. So several years ago, I was dating this Finnish girl and meeting her family around Easter. Her family used to like a little trick on non-Finnish people, nothing malicious, but they'd serve a bowl of mämmi and watch the reaction. They were doing this since the mother dated a German back in the 70s.
Anyway, I got a bowl of mämmi; the girlfriend had a face that screamed "Oh no, what are they doing?!" while the rest of her family were snickering. I finished the bowl and said it was quite nice and thanks for letting me try it. The look on their faces was worth the airfare alone.

My mom made some mämmi as an experiment once.
It was like getting hit in the tastebuds by a baseball bat made of orange zest.
