Remember: once, long ago, someone was the first person to look at a lobster and say “you know what? I’m gonna eat that.”

Remember: once, long ago, someone was the first person to look at a lobster and say “you know what? I’m gonna eat that.”

And that person probably couldn't afford anything else. It wasn't that long ago, as this interesting little bit of history points out, that lobster was a "trash fish" fo' po' folks. The rebranding wasn't as drastic as that given the Patagonian toothfish (sorry: Chilean Sea Bass) or what is being attempted in the U.S. Great Lakes region with the "Asian carp" (sorry: Silverfin).

As for formerly humble food :

Barbeque ribs, they sure are po' folks food turned into a delicacy.

Brisket - same thing.

Cassoulet - same thing.

Oysters - same thing.

Clams - same thing.

The effect isn't confined to lobster.
