I really like the work that Flat Black Films does.  (Yes, I am aware that most people who saw it violently disliked Waking Life.)
I'm also a huge fan of William Kentridge.  Unfortunately, you can't really see his work outside of an art museum.  He does amazing charcoal drawings which he photographs and then erases and draws over -- so you get all kinds of neat eraser marks and old drawing reminants that become part of the animation.  His works look like animated wood cut prints.
(And I totally second the recommendations of Jan Svankmajer and The Quay Brothers).

Ya know what, I love rotoscope and Waking Life had that going for it when I watched it.  It was a little over my head, but only because for a movie like that I need to be in a particular mood.  However, Ralph Bakshi.  American Pop, Heavy Metal, that one series on HBO, he has some crazy source material to work with sometimes but it is very distinct.  I do like his work on that alone.  I can watch something and go "that's definitely Ralph Bakshi".
