Oh come on, lacking? Ride On? Bloody Sunday? They have some good stuff. Though, I've got to say, the best celtic metal albums of all time is still probably Waylander - Reawakening Pride Once Lost. Brilliant stuff. You're mentioning pretty metal folk metal bands though. If we're talking borderline, shouldn't we be talking about stuff like:

Skyclad - Oui Avant-Garde a Chance/Skyclad - The Answer Machine?
Korpiklaani - Spirit of the Forest

...and that's all I can think of actually. Have you heard Finntroll's acoustic album? Incredible.

My friend said Blind Guardian was emo. I was listening to Nightfall at the time. What is emo about Nightfall?

The Fucking Champs sound like a 16-bit Sega driving video game's soundtrack, played on three guitars, with some old school Metallica influences.  No vocals, just instrumental and drums.  They're unbelievable technically but maybe not the best songwriters.
