Ive heard Virgin Black, and they are VERY good for the sheer originality factor there. I don't know if they're from Adelaide though...  Alchemist are good as well, but what gives me the shits about Australia is for every good band is like 50 other totally non-original bands that say "Hey, I reckon we could do that" and then sound like whatever is big in metal at the time, and not very good either. Pathogen Australian and are very good for what they are, give em a listen. www.pathogen.com.au.

God yes

I gotta say, I am not a metal head by any stretch of the imagination, but Alchemist and Dungeon are cream-worthy, although Dungeon are quite traditional power metal, not borderline at all.

Symphony X are something I've considered getting into as well. My friend played me some stuff once that blew my pants off, and they're a lot like Dream Theatre, except with a man singing.

I also really like Tool
