Praeserpium Machinarum:
Lyrical prowess, and subject matter in some cases. I am not squeamish concerning subject matter, just that some are mediocre such as Soulfly and God Forbid. Maybe I just haven't been exposed to the right stuff, I mean I appreciate songs about "hailing shit" as much as the next guy.
It's when they try to sound evil/krieg/whatever and end up sounding ridiculous that I object. I also seem to have a problem with "shoddy" production for most part, I just can't take it, I felt that way about Immortal for example.
About the ones you mentioned, what is a good starting point?

That's quite a diverse range of sound, but I'd recommend:

I already know with Bloodbath and Amon Amarth, but I will check out those bands, thanks. And I only have one EOS album, The Spectral Sorrows, that I totally love. Next time that I'll be in The Metal Shop I'll pick myself a couple of albums.

Anthrax's Cought In A Mosh should be there. Absolutly.

Both of those bands are shining examples of the meathead lyricism strain in metal that tends to give the whole genre a bad image. All of Khar's suggestions are great. I would also recommend Enslaved-Isa or Beneath the Lights, Virgin Black, Borknagar, Dark Tranquillity, and Opeth (yeah I know they are an obvious choice) for just a few bands across genres that have good lyrics.

Also check out Kalisia while you're at it.  They've got their entire first EP, Skies, up for download on their website.  It's quite good progressive death metal.
