Is there any realistic simulator out there, and by realistic, I mean if I hit a building, the my wing snaps off, and I start a death spiral.

Most of them let you crash the plane, but that's about it in terms of damage and stuff. Most of the realism is in the controls, location and weather, etc. Also, don't use an image in your signature.

It's not that bad, too small for me to really care about it.

Go fly a real plane. =P Kiddiiiing, of courrssse.
Maybe some military group has a nice realistic one. Who knows.

You can't combine "realistic damage simulation" and "realistic flight simulation". Flight sims, by their very nature, don't include post-extreme damage because simulation after that point is unnecessary: if you get in that situation, no amount of experience or skill will help you, and you will die.
As far as I'm aware, the most realistic and by most counts best flight simulator available is the latest version of Microsoft Flight Simulator. The same basic engine is used to train pilots, I believe.

It's not quite as balls-to-the-wall realistic as Flight Simulator, but if you want a fun combat sim with more realism than anything else I've played, get thyself to IL-2 Sturmovik.
Then get a few of your friends around, make sure everyone knows how to play it (and has a freaking joystick!), and proceed to dogfight. Much, much fun to be had.

Yeah, realism in flight sims is about simulating flight, not having bits fall off your plane. The combat flight sims generally have much better damage - here's (http://www.simteevee.com/watch.php?mdid=706&t=IL2+Damage+Modeling) an example from Il-2, and Lock On: Modern Air Combat has some shiny damage too.

The F-15 flies with wing broke off. After a midair with an A-4 .
Two F-18's collision midair while training, and land safely.
Sukhoi's can even handle more damage.
