I'm curious if anyone has any recommendations for guitar players that have a more Eastern flair. Thinking more Middle East and India than Chinese.

Although he plays mostly slide blues, Derek Trucks does have a song (http://www.youtube.com/watch?v=N65cP52NC8s)or five that is/are heavily influenced by Indian music.

John McLaughlin is the main man that comes to mind, especially his Shakti period.

Other than that, you can always try Robbie Basho...I'm sure there are others, but it's late and that's all that comes immediately to mind.

Does the band Grails count? They use a 12-string to very middle-eastern-y effect.
