I'm imagining several at radically different times of day to accommodate our various time zones.
What conferencing platforms are least intolerable to everyone?

I like the idea, while also being super self-conscious about my voice, and doubly so about my face as it looks on camera.
But colour me tentatively interested.

Possibly. People around me usually use Zoom (for video) at present, and have difficulty making MS Teams work at all!
I also use Discord, which can do audio meetups, though I'm not sure if one has to set up a server (within Discord, that is) to contain them.
My devices with a camera and mic also have Skype on, but I do not let Facebook or WhatsApp touch them.

I would be interested. I usually use Messenger for video meetings, since my computer does not always like Zoom. If I join an existing meeting, it tends to do all right, but not always.
I did participate in the audio chats that we had, several years ago.
