Anyone have a good recipe for 6 1/2 cups of blueberries?

put it in a pie!
here is my all purpose pie crust + pie filling recipe, there are probably better ones (seriously consult james/slick he is the man) but i like this one, it makes a decent enough pie.

2 3/4 cups flour
1/8 teaspoon salt
1 cup shortening
1/4 cup and 2 tablespoons cold water
1 egg
1 + 1/2 teaspoons vinegar

blueberries
1 cup sugar
1/3 cup flour
1 tablespoon lemon juice

1 egg yolk
1 tablespoon water

preheat oven to 350F
combine flour + salt, cut in shortening until it resembles coarse crumbs
whisk separately 3/4 cup water + egg + vinegar
stir into flour until mixture forms a ball
divide dough into 2 balls, wrap in plastic, refridgerate for 4 hours
roll out one ball + place bottom crust into pan
in large bowl combine blueberries + lemon juice + sugar + flour
put in pan, cover with top crust
brush top crust with egg yolk beaten with water
bake in oven for 50-60 minutes, or until filling is bubbly in center + top crust is golden brown

there is no set amount of fruit for this recipe, really, i just kind of fill the crust with fruit. usually it takes about 5-7 cups though so your amount of blueberries should be perfect.

I went to the store to buy grilled chicken, and came home with fresh salmon and other things, in addition to the chicken.

So I have now treated myself to some fried salmon, with a nice salsa, some avocado, and some yummu yummy toasted bread with like a DOZEN kinds of grains in it.

cheesecake factory cheesecake (chocolate coconut cream + caramel apple strudel fuck yes) with friends in the afternoon.

french toast + strawberries + raspberry lemonade for dinner.

deliciousness rating: A, a chocolate milkshake could have bumped it to an A+

Guys I would really like some recommendations about eggs. They just really aren't my thing. I have never really been a fan of the taste, but it is almost always the texture that makes me gag. I have tried poached eggs from a restaurant and they were ok, until I broke the yoke and then it just got disgusting. I don't really like scrambled eggs or deviled eggs. My boyfriend once made me an omelette that was fantastic and that I wanted more of: he smothered it in salsa and threw in bacon and stuff, too, though. And I like the tiny egg bits in fried rice, but they have to be small.

However, they are just so cheap. I could afford to eat eggs instead of meat and be happy about the money left over. But I can't make myself do it.

Anyone got any advice? Texture is a big thing, please remember.

Katie, what other types of eggs have you tried?  Hard boiled?  sunny-side up?  Maybe the scrambled eggs you had weren't that great.  I am very picky about mine and they need to be super dry and not mushy for me to eat them.  There are ways to enjoy eggs!  Do you like the taste of eggs?  Maybe try removing the yolk to get a different flavor and texture when cooking.

EGGS

i really don't like eggs either but have been eating more lately because 1) they're cheap and 2) i'm trying to get more protein into my unhealthy diet.

so far ways that i have enjoyed eggs are:

*throwing a couple in while frying rice.  eggs + rice + assorted veggies (zucchini, broccoli, mushrooms) + soy sauce. eggs + rice + beans + ground (veggie, in my case) beef + tomatoes.

*throwing a bunch of cheese into my scrambled eggs helps.  i don't really know if that helps with your texture problem but it might.  try cheesy scrambled eggs in a sandwich of toasted bread + tomatoes?

*FRITTATA.  goddamn frittata is so delicious, i want to go home and eat some right now.  it is the only eggy thing that i truly like.  my roommate made a spaghetti frittata once that was super amazing.  here is a recipe for it.  it is not the one she used so i don't know if it's any good but how hard could it be?

QFT. You can make a really big, filling fritatta for cheap. I make it with 4-6 medium/large potatoes, a few bell peppers, onions, 8-11 eggs, and a shitfuckton of cheese. Julienne the potatoes and cook them til they're just tender, lightly saute the other veggies, whip up the eggs with a splash of milk, mix it all up with the cheese, pour it into a casserole dish and cook it at 315oF for about 40 minutes, then take it out, mix it up again, sprinkle with parmesan and paprika, then put it back in til it's firm. So delicious. Oh yeah, and you can add leftover things like pasta and veggies from the night(s) before!

Anyway! I'm being forced to go to the Mandarin today, which is like a big Chinese-Canadian buffet. It's terrible crap food but all the kids from the office have agreed this is the place we are going.

Dear food thread, I completely forgot to tell you! You remember that large piece of fresh salmon fillet I bought? Well, I prepared some delicious thick tomato-sauce with lots of chopped olives in it, and some mustardseed-oil and stuff, and cooked/baked/poached the salmon in it, in the oven (just put it in the sauce with the skin facing up), then I ate it.

But THEN I decided I wanted a picknick so I called together the troops and we had yummy salads in the grass, in the sun, on a blanket, with lots of yummy wine and strawberries.

So, in summary: I ate summer :o :o :o it was good
