I understand that...but why not just have a 500g package of pork? When they intentionally package it as one pound, even if they only label it in metric...it's like a secret hat-tip to the Apothecary system...or Murricah. Even when we have 16.9 Oz water bottles, they say 500mL.

Maybe they used to come packaged as a pound and had to change the weight measurement?  :? It's not a big company, comparatively, so they could still use old measurements in the processing place. Plus they'd have to add another sausage or change the size of them, which would mean changing the production method and price too.

I've never known how many grams were in a pound so I never questioned the weight's number.

That's because there are laws requiring the use of metric units in many situations.  People have been taken to court for selling in pounds and ounces in contravention of the law.  However, beer and cider must be sold in multiples or submultiples of a pint (UK pint = 20oz, not the skimpy 16oz US one), even though all other alcoholic drinks are sold in metric units!  Also milk in returnable bottles must be in pint-based units.

Things are sold in sizes which correspond to old units because (a) people are conservative, (b) machinery is kept in use, or (b) lots of people are still using old cook-books!

I almost invariably cook in lbs and oz, which is frustrating really when most ingredients are in grams and most internet recipes are in cups (America, can you please stop doing that? It is almost impossible to convert your recipes into British!).

I have a spring-tension weighing scale, but only because I make a lot of things by hand. Most people don't have a mortar & pestle either.

Yeah, this is why most recipes that aren't tested end up looking ridiculous, because no one bothers trying out the measurements. I usually go by the eyeball rule anyway. If it looks OK, it is. Tweak it upon taste-test as necessary.

I've had a food scale for years. I forget why I first needed it, but if a bread recipe calls for an amount of flour measured by weight, with a conversion to volume, it seems more accurate to use the weight measure. It's pretty good for outgoing mail, too.

I generally cook by eyeballing it, but if I'm baking or making something complicated from a recipe for the first time, I want to weigh things. My scales are so cheap that they're probably miles out from accurate but at least the proportions are correct.

I finally have a digital kitchen scale so I can weigh stuff below 100 grams. I had an old spring-tension scale but if that one went under 100 grams, it was a complete crap shoot whether it was 85 grams or 40. This time I finally got the proportions of the white sauce right.
