who are "they" and what in the world posessed them to cut up a corpse like that and photograph it? where would "they" get said corpse?

It's called the Visible Human Project. I believe the guy was a prisoner on death row who agreed to be used in the project after his execution. CAT and MRI scans were also taken so that the images obtained through such scans could be compared directly to the cross-sectional slices of the human body which they image.
