I see this name Sigur Ros all over QC and its related sites.  I admit to never having heard of them until Marten mentioned them way back when.  Am I missing something colossal and earth-shattering here?  Should I go buy every album they evar made like omgwtf u n00b?

What kind of music do they play, anyway?  Someone educate the callow youth.

They play post-rock somewhat akin to Godspeed You! Black Emperor but with an icelandic twist like this: Sigur Rós - Svefn-G-Englar

So, uh...I'll probably be vilified for this, I dunno, but my first impression (from the song you kindly linked for me -- thank you) was that of a slightly uptempo Mazzy Star-type thing.  The song was undeniably beautiful -- interesting choice of vocal lilt in the chorus's main line -- but am I a bad person for thinking "great intro, when do they get to the actual -- oh wait nevermind it's over already"?

Understand: I am not judging the almighty Sigur Ros.  Yet.  I still have a lot to listen to before I can form a solid opinion.  This is just my first impression.

I am not entirely sure what you are talking about, but I guess yes it can seem like it's meandering(if that's what you mean) to some.
But then again that particular song is more of a soundscape really, a moodpiece.
They do have more regular songs like Staralfur or Glosóli, but it was this song they breaked with so it seemed appropriate.

As we speak, I am acquiring the bittorrent of their album entitled Takk ... you know what's probably going to happen?  I'll spend a few days -- a week, perhaps -- listening to their stuff, then I'll go back and listen to that first song again with a whole new set of ears and hear completely different things than I did upon the first listening.  That's the way it is with me: after letting my brain figure out what exactly to expect, it'll revisit earlier assumptions and completely overhaul the conclusions it had come to previously.

It would be Mazzy Star if you slowed it WAY down and dragged every song out for 10 minutes.  I think that the comparison mainly lies in the dreamy aspect of both bands

I don't know if this is completely accurate.  Their music is most definitely post-rock, but they a really different sound from GY!BE (imo).  Sort of a mix of post-rock, shoegaze, minimalism, and...the style of rock Low plays (i.e. slowcore/sadcore) maybe?

Oh and Takk...  is considered to be the most accesible album, but Agaetis Byrjun is definitely the best, followed by ( ), then by Takk... and Von.

I did say 'somewhat' since I recognise that the resemblance is a bit superficial beyond the fact that they share genre and to a degree aesthetic. I love Low but I don't really see the connection other than perhaps a similarity in mood(?), Sigur tends to be less brooding though.
Perhaps this is due to ignorance but I don't see that Sigur Rós is particularly minimalistic, quite the contrary I would say.

I was thinking Low because of similar tempos and some similar mood, with a generally laid back and slower approach to rock.  Its not a great comparison, but I saw some similarities.

And you're right to say that many times Sigur Ros is very un-minimalistic, but I think their are other times (especially on ( )) where they get very minimalistic.  I think Untitled #5 (Alafoss) is an okay example, and Von also has some good examples.  Not minimalism in the traditional sense (i.e. classical minimalist, like Phillip Glass or Steve Reich), but evoking a feeling of minimalism.
