I just returned from a potluck party and approaching exam period my schedule was pretty hectic, so I needed to find a quick, easy and fabulous desert to take with me. I decided on caramelized apples, here's my recipe:
1.5 cups of brown sugar
3 tablespoons of butter
A drop of vanilla extract
3 apples
Now given that I was tight on time I didn't have a chance to get real cooking apples and as such I used good old Macs, which turned out quite well considering.
You start by tossing the sugar and butter in a pan, make sure it's a nice and wide one because you're not going to want your apples stacking up.
Now core and slice your apples, I prefer thinner slices so they get completely soaked through with the caramel.
Carnage.
Now fire up the stove, it doesn't take long for the sugar to melt so make sure your apples are sliced first. Simmer on med-low heat until the concoction is quite fluid and consistent.
Once the caramel is ready toss your sliced apples in, spacing them evenly. Drop in the vanilla now and put the lid on the pan, allowing it all to simmer. Regularly stir the mix spreading the caramel all over the apples. Cook until the apples are soft and brown.
Now drizzle over ice cream and enjoy!
