The late Queen Elizabeth the Queen Mother was once served at a celebratory meal a champagne from each decade of her life. When the champagne from ~1900 was poured it was dark and syrupy; it is recorded that on tasting it she simply remarked: "very interesting".

Actually, the spelling depends on the language. Irish English and American English tends to use whiskey, while the likes of Canada, Scotland, Japan and Wales use whisky. That said, there are always exceptions where a brand will use a particular spelling. The real difference comes down to how the spirit is distilled and the methods used. And why, yes, I did work at a distillery for a time.
