Unless the whisky was stored in a waterproof, airtight cask and was immune to the effects of water on wood (i.e. rotting the wood) or buried in mud, that whisky was stored in a bottle for at least 200 years and it will taste terrible. Whisky (I'm not going to get into the differences of distilling because the one thing they all have in common is being aged in a cask), only, and I do mean this, only ever ages in a wooden cask. Once its out of the cask, that's it, that is all it will ever age. If its in a bottle, it doesn't matter if it is stored in a dark, cool area, it will start to break down after a while.
Sorry about that.

Let's assume it somehow got buried in mud/sand at the bottom of the ocean?

I'm sure everything you said is true, but a couple of points:
1) the comic described it as "rarest", not "best" or "tastiest" ... it's still going to be valuable as a novelty even if it's not very nummy
2) they haven't tried it yet
so I don't see where any of it should bother you...yet. perhaps Jeph's going to go to a joke about exactly what you described on Monday.
Also. remember that Jeph's universe might include a physics/chemistry exemption for the decay of whiskey in bottles submerged in pirate ships. It's up to him.
The last time something like this came up was when Dora had to roast more coffee for COD's same day use having forgotten to roast extra for TSB. We mentioned that that wasn't going to work in the forums, so Jeph graciously nodded to us in a following comic. Basically, I think the threshold is this: if Jeph can twist it into a good joke, it'll get noticed, if not, he'll ignore it and move on to something that's better/funnier/more interesting.
DSL:
Who said it has to be a pirate ship from the time of the Spanish Main, me hearties? The distaff half of the Good Morning crew only said pirate ship. Station's assuming, or just effin' around.
For all we know, this was recovered from a Somali pirate dhow one of the KillSats zapped last week. Or maybe from a boat belonging to that guy who wrote the scraper app; that'll learn 'im.
Actually, I 'm pretty sure Jeph will have something better.

Actually, I presume the whisky's done with and Monday will move on.
