Olives straight from the tree.... no thanks, they need soaking for at least 6 months or a year. We grow them in our backyard.

I wonder how people discovered olives. "Yuck, these small fruits are not really tasty. Let's soak them in brine for half a year and try again"?

The actual answer is that they (and some people still do) systematically experimented with things to see if they were edible. At some point folk realised that thir preservation methods weren't perfect but could also produce desirable changes as well as staving off undesirable ones.
Also, much more interesting to me is; who was the first person to look at a lobster and go "you know what? I'm gonna eat that."
