Of Montreal-Hopeless Opus or the Great Battle of the Unfriendly Ridiculous is a pretty neat song with a really pretty piano part plus it is four seconds short of 18 minutes-- but it doesn't get boring! Actually, the first 10 minutes are only piano, then they start singing for a little bit.
Hope There's Someone by Antony and the Johnsons is also really nice in an entirely different way.
(and the piano in Monkey Gone to Heaven by the Pixies adds so much, even though it's barely noticeable)
