Older stuff that I find somewhat essential:
Lush - Spooky or Split (I'd actually argue that Gala, the compilation of the first two EP's, is still their strongest material, but both of these are a bit more accessible).
The Stone Roses - Self-Titled
Stereolab - Mars Audiac Quintet
Pizzicato Five - Made in U.S.A.
Ride - Nowhere
Cocteau Twins - Heaven or Las Vegas
Daydream Nation certainly represents some of the best of Sonic Youth. I might argue for Sister over Daydream, but it'd be close.
