Joe Satriani - Ceremony
Joe Satriani - One Big Rush
Joe Satriani - Surfing With the Alien
Dream Theater - Erotomania
Iron Maiden - Transylvania
Led Zeppelin - Moby Dick (especially the live version)
Liquid Tension Experiment - Acid Rain
Liquid Tension Experiment - Paradigm Shift
Rush - La Villa Strangiato
Rush - YYZ
Steve Vai - For the Love of God

Of course, I could list just about every Joe Satriani and LTE song, but that's the cream of the crop right there.

Liquid Tension Experiment - Every song except "Freedom Of Speech", "Hourglass", and "State Of Grace".

Roy Buchanan - The Heat Of The Battle

Eels - Marie Floating Over The Backyard

Spoon - Theme From Wendel Stivers

Mephiskapheles - Foursome

Tin Hat Trio - All, but especially (right now) Old Grey Mare, and Anna Kournikova

Colonel Claypool's Bucket Of Bernie Brains - Jackalope

Mr. Bungle - The Bends

And forever: Miles Davis - What I Say

This isn't really a sensible topic, since a lot of great bands are entirely instrumental and one is tempted to post the band's entire repetoir. I would say that 4/5 of my favorite songs are instrumentals. Whatever though.

Seconded  on everything Storm Rider said, and Lacreme (well, the LTE, Eels, and Bungle part). On Colonel Claypool's Bucket of Bernie Brains, I'd go with Elephant Ghost rather than Jackalope. I also really like Bungle's Chemical Marriage.

Alone in Kyoto is insturmental? I have to relisten to that record.

and Miles Davis' Bitches Brew trumps everything else. seriously.

Agalloch - Folorium Viridium
Apocalyptica - Path Vol. 1
Arch Enemy - Marching on a Dead End Road
Burzum - Han Som Reiste
Crown of Autumn - Forlorn Elven Realms
Cruachan - A Celtic Mourning
Cryptic Wintermoon - Obsidian Fragments
Dimmu Borgir - Fear and Wonder
Dissection - Feathers Fell
Finntroll - Under Varje Rot Och Sten
Forefather - The Sea-Kings
In Flames - Pallar Anders Visa
Iron Maiden - Transylvania
Korpiklaani - With Trees
Liquid Tension Experiment - Paradigm Shift
Orthaugr - Der Weinende Hadnur (Burzum Cover)
Skyclad - Bombed Out
Sol Invictus - Figures on a Beach
Sopor Aeternus & The Ensemble of Shadows - Die Knochenblume
Unleashed - Where No Life Dwells
:wumpscut: - Black Death [Muted Concept]

Only one per band. Burzum gets in twice because Orthaugr's cover is utterly beautiful. With more than this, the list would be dominated entirely by a few artists.

What do you mean by instrumental exactly?  Because most of the stuff I listen to already lacks lyrics, or what lyrics exist are twisted and cut beyond recognition, Prefuse 73-style.

However...

Seeing as the vast majority of the music in my favorite genre (post-rock) is instrumental, I might as well just transcribe the entire discographies of godspeed you! black emperor, set fire to flames, A Silver Mt. Zion, Do Make Say Think, Explosions in the Sky, etc., etc.

I love Pavement, but do yourself a favour (if you haven't already) and check out the tune from which they drew inspiration for this number: "Take Five" by the Dave Brubeck Quartet, from the 1959 album Time Out.  It's a jazz classic.

and now Dominik Eulberg!

Mmmm... Minimal House.
If you like the Eulberg vibe, you should check out this mix by Sami Koivikko. It's devastatingly minimal.

1. Dominik Eulberg: "Die Rotbauchunken vom Tegernsee" Traum
2. Beese & Schmitz: "Meander" Liebe*Detail
3. Osborne: "Graphite" Spectral Sound
4. Marc Houle: "Borrowed Gear" Minus
5. Mathew Jonson: "Magic Through Music" Itiswhatitis
6. Luciano & Serafin: "Yaki Soba" Telegraph
7. Noon(at: "Maggot" Treibstoff
8. Sten: "Stalker" Sender
9. Meteo/Thiel: "Moonoverdada" (Peter Grummich Remix) Meteosound
10. Pan/tone: "Smoke Signals" Sender
11. Televerket: "Pretty Girls" Italic
12. Tomas Andersson: "Happy Happy" BPitch Control
13. Rex The Dog: "Frequency" Kompakt
14. Metope: "Libertango" Areal

Anyway, I'd say at least 90% of the music I listen to is instrumental, so there isn't a simple answer. Turquoise Hexagon Sun by Boards of Canada and She Moves She by Four Tet have to be a strong contenders though.

Probably something classical(Ride of the Walkyries comes to mind) or the entirety of Lift Your Skinny Fists like Antenna to Heaven. Plenty of soundtracks as well e.g. Road to Perdition, Lord of the Rings and others.
I am not really big on instrumentals, hardly ever listen to it to be honest.

Moby Dick is superb. Would had loved to hear that live.
Star Spangled Banner is also pretty awesome.

I also love listening to 32 Ways to Die by Sum 41. Its a good track even if you dont like their other stuff.

I could have sworn Duelists had vocals, are you sure you don't mean Losfer Words, which was on the same album?

And I was considering saying Call of Ktulu, except that it's basically Hetfield ripping off Hangar 18 by Megadeth, but I couldn't say that because Mustaine sings in it.

This thread has gone too long without mention of Squarepusher.  Try, eh... some of his more melodic stuff.
Iambic 5 Poetry, I Wish You Could Talk, Tetra-Sync.  These just come to mind.
Miles Davis fans might really like Music Is Rotted One Note as a whole album, though.
