I used to listen to a lot of ska.  Here are some decent ones:

Catch 22
Streetlight Manifesto
Big D & the Kids Table
the Mighty Mighty Bosstones
Less Than Jake (their older stuff)
The Aquabats
Goldfinger
The Mad Caddies
RX Bandits

I know they're not ska, but some Cursive songs off of The Ugly Organ remind me of ska a little.

Instead of ska, try a band with a ska-ish sound, but are loads better than any of those bands I just listened to: ZOX

Not to offend or sound ignorant or anything, but is ska still around in any substantial sense of the word? I remember The Mighty Mighty Bosstones and Reel Big Fish being all over the radio way back in the mid-'90s,  but as far as I know all of that stuff faded into complete obscurity shortly after. I like to at least be aware of the various underground music movements going around (not that I'm any sort of expert) but ska hasn't even remotely entered my radar since it came and went back then.

Less than Jake's high on the list, but yeah mostly its died out but theres still hardcore fans. Theres quite a few ska bands in my area, but they suck. And yes whole genre burn, it was good.

The skatalites are really good. So are The Ethiopians. For more modern stuff, a lot of the bands on Asian Man do a really good classic Ska/Rocksteady thing that is well worth listening to. I like Chris Murray a lot, but really there is a lot of music there that will entertain.

Ska is awesome for listening to at a bonfire on the beach in southern California, which is really all I ask from the genre.

Save Ferris
Sublime (I'm surprised no one's mentioned them yet!)
Suburban Legends
Cherry Poppin' Daddies
Flip The Switch
The Dance Hall Crashers
The Hippos
Mad Caddies
Lucky Boys Confusion
Mustard Plug
(Early) No Doubt

And a lot of bands considered "crack rock steady" or similar genres remind me of ska, but less cheerful.
Choking Victim
INDK
Leftover Crack
World/Inferno Friendship Society

Rocket From the Crypt actually were a good band, but from what I remember they're not really all that ska-ish.  I mean, I guess that's one influence, but they don't sound like your typical "ska band".

The town I live in has a yearly ska festival.  I wish I could say I were kidding.

Rocket From the Crypt actually were a good band

Oh man why do I keep hearing folks say this?  It's like, am I crazy?  My cleaning lady asked me if I wanted my bed made, and I was all, "yeah, sure."  Then she was all, "Do you listen to Rocket From the Crypt?"  What the hell?

Just yesterday I went outside to get the mail at noon and just happened to get to my mailbox at the same time as the mailman.  I said, "Thanks, man I'll just take that," and he responded, "Huh, a package from Barnes and Noble?  I hope it's some Rocket From the Crypt."

I recommended Scream, Dracula, Scream! because it used a lot of brass and was probably better then the rest of the recomendations in this thread.

If we're talking about albums that use a lot of horns and stuff like that, Cursive's The Ugly Organ might work.  Right?

I really, really hate Ska with all my heart but I'm sure early on there were some shining stars.

I'm told The Specials, Toots and the Maytails and The Skatalites were great bands. I'd start there.

I havn't heard any original Skatalites original stuff but Im pretty sure it was they who did a totally kick ass cover of the james bond theme.

I think most of the bases have been covered by other people, except that I find Mars Volta ska and Justin Timberlake equally wretched. It's like choosing between somebody sticking a fork in my eye or up my ass. I guess I would have to choose the ass, but it still isn't a preferred outcome.

Did I fly off the handle and say some over the top things?? Yes, but it wasn't meant to be taken seriously. I just don't like Mars Volta ska, and I find the idea of trying to make sense out of their lyrics by reading a book find good ska bands patently ridiculous. It's not like I genuinely think nobody should like or listen to the Mars Volta ska. Hell, when their Reel Big Fish's first second album came out, I was a big fan of it and At The Drive-In ska. I want to say I've 'grown' out of it, but that will start all kinds of more arguments, so I'll just say that I don't like them ska anymore.

Per what bands I think do what Mars Volta ska does better, it's more that they basically try to cram prog rock, latin music, jam bands, kraut rock, and post-hardcore into one band. To be sure, there aren't any bands who do exactly what they do and do it better. On paper that sounds amazing, but I've never found the results to be worthwhile. I'd much rather listen to a band who does one of those things really well than one who does them all below averagely if you're going to listen to ska you might as well go listen to reggae instead because it's superior in every regard.

The only really good modern ska band that comes to mind is The Slackers.  They're about the only band worth a shit on Hellcat Records.

The Beat were good (The English Beat in the U.S.)
The Specials were great and as such Fun Boy Three was pretty good
Toots and the Maytals are great

After a quick look over of the hellcat roster, I would say Rancid is worth a shit.  Joe Strummer and the Mescaleros are definitely worth a shit, but I'm not sure the dead should be included.  I would agree that Dropkick has been middle of the road since McColgan left the group.

Listen to Streetlight Manifesto. They are the only ska band that matters. I would dare say that their only real album, Everything Went Numb is one of the greatest albums I have ever heard, and I don't even listen to ska. Actually, I despise the genre.
