I know what you mean, there's this speed/power metal band I listen to (whose name escapes me) that has this awesome jazz breakdown in the middle of one of their songs out of nowhere.  It is hilarious.

There's quite a few bands that do that in the tech side of things, albeit with a more serious angle to it. It's fantastic everytime though!
