Trip-Hop - Now, it may be that it's because I haven't really explored the genre that much at all, but I love everything I've heard.  Portishead, Massive Attack, Tricky, Bjork, Emilie Simon, it's pretty great.

Some trip-hop that is kickass not listesd includes:

Luke Vibert + B.J. Cole's "Stop The Panic" (or at least half the tracks): Excellent slide guitar and fat motherfuckin beats. EXCELLENT.
Nobody's "Pacific Drift": Like Portishead with a dude singer, Fender Rhodes instead of DJ's, and more cute.
Lark's "Mouth Of Me": South African trip-hop with an industrialish Mike Pattonish influence. like Massive Attack but more GIGANTIC.

Yeah, the link Cory posted has one of their EPs, so I gave it a go. It's fun.

Gotta say above absolutely everything, I love Clutch to death.  They are beautiful (put on an amazing show, too, and hopefully I'll see them on New Year's).
Other than them, anything Les Claypool has ever done (including Blind Illusion), and anything Mike Patton has ever done (including Lovage).

Throw in some random bands from every metal genre, and a couple indie rock bands, and I'm done.
