Recommend some games that appeal to old school gamers

Observer:
F-Zero GX. Precision control, and it's ASSKICKINGLY HARD; forcing you to get far, far better.

There is a mode for customizing cars, but it seems to produce inferior results- I've always done better with the normal set.

BillAdama:
I've got Okami.

Everything about it is amazing except the actual fights.

Dragon Quest isn't quite what I'm looking far.  It does meet my 'gameplay over production value' criteria, but it's a little bit repetetive.  Shin Megami Tensei is like Dragon Quest on acid.

Locke:
As much flak as its gotten critically, I'd say Lost Planet.  Its truly old-school in its gameplay, although very shiny.  You're not dicking around with allies or escort missions or anything like that.  If something moves, shoot it until it dies.

I like it!

Catfish_Man:
As is usual for game recommendation threads, I'm gonna say Cave Story. It's more on-topic than usual in this one though :D

Stranger Dan:
Castlevania: Circle of the Moon
Castlevania: Harmony of Dissonance
Castlevania: Aria of Sorrow
(Harmony of Dissonance and Aria of Sorrow are also available in a 2-in-1 cartridge)
Castlevania: Dawn of Sorrow (though I haven't played it yet, since it is just Aria of Sorrow 2 it would be hard for it to not be wonderful)
Castlevania: Portrait of Ruin

Legend of Zelda: The Minish Cap

Metroid: Fusion
Metroid: Zero Mission

What I'm trying to say is that you spend your time with a portable system since they are basically still making SNES games for them.
