I was watching TV once in the middle of the night, and there was some show where which featured chefs making their restaurant's signature dish. These were not restaurants run by famous chefs, and not hometown diners, but the restaurants at nice hotels, where well educated, nameless chefs create Michelin one star experiences.
This one episode was somewhere in the Caribbean and the chef was making some dish with a sauce that was simmering for a while, and he puts in some seasonings, naming them as he does, and then he takes some herb from his chest pocket and doesn't name it. The host asks him what it was, and he just says:
"You know when you are cooking at home, and your meal could use that special something extra?"
he gives the camera a knowing look
"that's what this is."
The chest pocket is for that "special something"
