So if 'vanilla' means 'non-S&M', does that mean 'chocolate' is 'S&M', or is it something else?

The term "vanilla" is not in opposition to chocolate, but is a way of saying "plain".
"whitebread" is also often used in the same context. That does not mean S&M is necessarily "pumpernickel" (or rye, for that matter).
