In searching for confirmation of this online (crazy stuff!), I came upon this Wikipedia page, which lists a ton of crazy shark facts, including:

It sinks, actually. Sharks don't have swim bladders, and it's swim bladders that make fishes float, and it's also what makes them explode when brought up from deep waters, due to rapid changes in pressure. That's what gives you the bends. Traditionally japanese fishermen would capture sharks, slice their fins off then toss them overboard, where they will sink until they die somehow.

A sharks gills don't pump water through them like a fish, they have to have water continuously dragged past them so they can breathe. If they stop swimming, which they can't do without their fins, then they suffocate.
